White Chocolate Popcorn

*Updated with a fun Valentine treat idea! I used valentine m&m's and this mix just became my favorite snack. Enjoy! Original post below:

If you're like me, the words "white chocolate" translate into "well, I won't be making that." I just don't like it. But for some reason, I love this popcorn. It tastes like candy! It's soooo good!


1 bag popcorn, popped (I use homestyle)
1 c. white chocolate chips

optional:
1/4 c. (or so) semi-sweet or milk chocolate chips, melted
m&m's

Melt white chocolate chips in microwave, taking out and stirring about every 30 seconds or so to prevent burning. Pour over popcorn and stir to coat. If adding m&m's, add now and mix in. Spread on a cookie sheet lined with parchment paper. If you didn't add m&m's, melt other chocolate chips and drizzle over top of white chocolate popcorn. Leave out to harden a bit. If it's taking too long, you can stick it in the fridge. Addicting!

Halloween Candy Corn Rice Krispies Treats



1/2 C butter
10 C Rice Krispies cereal
9 C miniature marshmallows {1 bag is about 6 cups}
2 C mixture of candy corn and indian corn
Candy pumpkins
3/4 C chocolate chips or mini chocolate chips
Yellow and red food coloring

In a large bowl, combine cereal, candy corns, and chocolate chips. Set aside. In a large sauce pan melt the butter and marshmallows together. Blend in 3 drops red food coloring and 5 drops yellow, adding more if you feel necessary to desired shade. Add marshmallow mixture to the cereal mixture. Stir quickly to combine. Spread on a large {cookie sheet} buttered pan. Press with buttered hands or spatula. While warm press on candy pumpkins spread around each square. Refrigerate and cut. Enjoy!

*There is a bag of Halloween candy called Autumn Mix that has the candy corn, indian corn, and pumpkins in the same bag. You will need two of those.

Granola!

What would we do without The Sisters' Cafe? I saw this recipe a few weeks ago and have been dying to try it. I finally did, and WOW! I can't stop eating it!

The recipe is here. I followed it exactly except for the cardamom. I even went to the grocery store to get it, but it's $12 a container! So I didn't get it. Also, you can do almonds or pecans and I did almonds since Carson's allergic to pecans. Plus, I prefer almonds myself.

Next time I make it, I will make one change. When you first spread it in the cookie sheet, I will try to "clump" it together better and make sure I don't have very many loose sections.

3 ¼ cups Oats (Old Fashioned or Quick—any combination)
1 ¼ cup white wheat flour-freshly ground if possible
1 1/3 cup shredded coconut
¼ cup flax seed (optional)
1 cup or more coarsely chopped almonds and/or pecans
1 cup brown sugar
1 stick butter
1/3 cup water
½ tsp salt
1 tsp vanilla
½ tsp cinnamon
½ tsp cardamom

Preheat oven to 300. In a large mixing bowl combine the oats, flour, flax seed, coconut and nuts. Set aside. In a saucepan over medium heat, combine brown sugar, butter, and water and heat until the butter has melted and the mixture is bubbly. Using a wooden spoon, stir the mixture together until smooth, and then stir in the salt, vanilla and spices. Pour mixture over the oats mixture and stir well to coat. Let stand for about 10 minutes. Spread mixture on a large baking sheet, separating it into irregular clumps with your fingers, and allowing space between clumps for the hot air to circulate. Slide it into the middle of the oven and bake until the top is golden brown, about 15 minutes. Remove from the oven and stir to break up the mixture into medium sized clumps. Return to the oven and bake again for 15 minutes before stirring again. Bake for another 15 minutes or until the granola is uniform golden brown and completely dry—this usually takes me about 45 minutes . Cool completely on a wire rack. Store in an air tight container.

Caramel Popcorn

1 C butter
1 C light karo
3 C brown sugar
1 can sweetened condensed milk
4 bags homestyle popcorn, popped and kernels removed

Melt butter. Add sugar and karo. Stir over low heat until smooth and add milk. Bring to a boil {still over med-LOW heat} and stir to soft ball stage. Pour over popcorn.

Chocolate Scotcheroos

1 C light corn syrup
1 C sugar
1 C peanut butter
6 C Rice Krispies {or Cocoa Krispies}
1 C semi-sweet chocolate chips
1 C butterscotch chips

Place corn syrup and sugar into 3-quart saucepan. Cook over medium heat, sitrring frequently until sugar dissolves and mixture begins to boil. Remove from heat. Stir in peanut butter. mix well. Add Rice Krispies cereal. Sitr until well coated. Press mixture into 9x13 pan coated with cooking spray. Set aside.

Melt chocolate and butterscotch chips together in 1-quart saucepan over low heat, stirring constantly. Spread evenly over cereal mixture. Let stand until firm.

Yummy Cereal Mix



6 C Rice Chex
6 C Golden Grahams
1 C coconut
1 small pkg silvered almonds
1 1/2 cubes butter
1 C karo
1 C sugar

Bring butter, karo, and sugar to boil. Boil for 2 minutes. Pour over large bowl with cereals, coconut, nuts, mixed together. Mix till all coated. (I added M&Ms to the batch I made in the picture and it was WAY good!)

Puppy Chow


1 C chocolate chips
1/2 C peanut butter
1/4 C butter
1 t vanilla
9 C Chex
1 1/2 C powdered sugar

Microwave chocolate chips, peanut butter, and butter for 1 minutes; stir. Repeat till smooth {in 30 second intervals}. Stir in vanilla. Pour over CHex in large Tupperware bowl with lid and mix. Add powdered sugar and put lid on. Shake it till all the cereal is coated!

Kellogg's Rice Krispies Treats - Original

3 T butter
1 package {10 oz, about 40} regular marshmallows or 4 cups miniature marshmallows
6 C Kellogg's Rice Krispies cereal

Melt butter in large saucepan over low heat. Add marshmallows and stir until completely melted. Remove from heat. Add Kellogg's Rice Krispies cereal. Stir until well coated. Using buttered spatula or waxed paper, press mixture evenly into 9x13 pan coated with cooking spray. Cut into squares when cool. Melt chocolate chips for topping and spread evenly.
